Mint and Pea Salad with Orange Infused Olive Oil
- 700 grams baby peas
- 1 Bunch of fresh mint
- La Barre Orange infused olive oil
- Sea Salt to taste
- Teaspoon of sugar
- Black pepper
- Lemon Juice
- 1 Avocado
- 1 sliced cucumber
- 1 sliced capsicum
- OPTIONAL: Sliced radishes
Place peas in a bowl and combine with chopped mint, salt, pepper, sugar and pour a generous quantity of La Barre Orange infused olive oil.
Let peas marinade for an hour Before serving add lettuce, avocado, cucumber and green capsicum.
Finish by pouring the juice of one lemon over the salad and toss.
The peas sweetened by the orange infused olive oil give a wonderfully festive completion to the salad.
